Hi Penny
Thought you might like to know that we have had two dinner parties in two weeks
both for ourselves and four friends. Boy, were they impressed!!
I have made the double baked souflees with cheese, blue cheese and crab and they turn
out wonderfully, allowing us to offer a choice for starter.
Boned and stuffed chicken I used the peppers in one and sage and onion in another for
the first party which allowed us to offer a choice again.
For the second party, I again boned and stuffed two chicken, the first with sage and
onion and the second with duck breasts, pistachio nuts and apricots.
For both parties I did two desserts, passion fruit mousse and meringue castles,
again allowing a choice. The only problem was that most people wanted to try
everything - and their verdict : I must have had a superb tutor!!!
The chilli jam went down so well that I now have orders for the next time that I
make some. My copies of the recipes are getting somewhat dog-eared so if you could
find time to either let me have a cd or, alternatively, email me the file, I would
be eternally grateful.
As to a comment for your guest book, how about "You have enabled me to make a lot
of people very happy"
We are due to visit our niece in Carmarthen next week, 22nd to 24th, and if you are
