Ingredients
  • 4 Poussin
  • 1 Small Onion
  • 1 Large or 2 Small Chicken Breasts
  • 1 Jar Peppadew Piquant or Sweet Peppers
  • 1 Tbsp Chopped Tarragon
  • 2 Cloves Garlic
  • 1 Small Glass White Wine
  • Olive Oil


Boned & Stuffed Poussin Instructions



Bone the poussin leaving the leg drumstick intact, this can be done well ahead. For the stuffing put into a food processor the onion quartered and the chicken breast, whizz until well combined without being a puree. Chop a small handful of the peppers stir into the chicken mixture along with the tarragon and seasoning.

Lay the poussin on the chopping board skin side down. Use the rest of the peppers to make an unbroken layer over the bird, top with chicken mixture, pull the sides of the poussin up and reshape gently before sewing up with fine cooking string. Chill until required.

Preheat the oven to 200°c Gas 6. Put the birds into a roasting dish with the unpeeled garlic cloves and the glass of wine rub a little olive oil over them, cover with foil and cook for 40 minutes, remove the foil and continue to cook for a further 20 minutes, basting occasionally, pierce the breast with a skewer to check that they are cooked, if so remove to a serving plate and allow to rest while you strain and skim the cooking juices, for a sauce, reheat the juices and add a little double cream.
