Seafood Salads & Soufflés
This three-day course is designed to take the mystery out of seafood, put some style and imagination into salads and dismiss the fear from the soufflé.

From cleaning and cooking mussels, dressing crab, potting shrimps and pan frying scallops to perfection, we will deal with a variety of seafood preparation techniques.

To accompany our seafood, we will prepare colourful and unusual salads. No longer the realm of just lettuce, tomatoes and cucumber, salads can be a delicious and attractive addition to any menu.

Finally, we will explore all types of soufflé, sweet and savoury, twice baked, chilled or frozen. We guarantee you will go home eager to experiment with your own ideas. The hot mint chocolate chip soufflés in particular are a must when entertaining.
