Basics
For those who would like a good grounding in all the basic culinary techniques, along with menu planning and food presentation, this five-day course will set you off on the right foot.
Students will learn about soups and sauces, pastry and bread making, cakes and baking, as well as roasting, grilling and casseroling meat, fish and vegetables and preparing varied and delicious puddings.
The focus for each day will be to produce a light informal lunch with freshly baked bread, followed by a more formal three or four course dinner. All of which will leave friends and family in awe of your newly acquired skills.
Advanced
If you already have a good basic knowledge of cookery and want to expand your repertoire, this course is for you. Over five days, we will equip you with the skills to prepare the most delectable recipes and compose appetising menus for all occasions.
You will cover both classical and contemporary recipes, as well as exploring some of the more complex techniques, including boning meat and poultry and filleting fish.
In addition to the more complex cookery, we haven't forgotten about the simple things. Using only the finest ingredients, we will show you how to prepare the tastiest vegetables and exciting salads, as well as intricate puddings to make any mouth water, bread-making and delicious pastries.

Five days of fun-filled cookery spent with like minded people wanting to learn how to eat well on a budget, leaving a little extra cash for the occasional pint in the pub after all that studying!
The course will show you how to shop cost effectively and the key items you will need to stock your cupboards with, as well as discussing how to combine colour, texture and taste to best effect. With just a little imagination, a dash of organisation and a pinch of planning, you can easily stretch the recipes we will cover to feed your friends or cook in bulk so that you can freeze portions
for days when time is limited.
