A Tasting Time
If you would like to sample the content of the longer three and five day courses, this one day taster session could be for you.
All courses are totally hands on. Beginning with coffee and home-made biscuits, its on with the aprons and sleeves rolled up to explore the world of cooking.
A typical taster course might include:
Bread from the Basics course
A Quiche from The Aga Can for lunch
A pound-stretching chicken dish from Student Survival (also for lunch)
A cake from That's yummy mummy for afternoon tea
A soufflé from Seafood, Salads & Soufflés as a starter
An impressive boned and stuffed poussin from Advanced as a main course
A three chocolate terrine from Dinner Parties made stressless for pudding
Eating Alfresco
This one-day course is designed to help make the most of our short-lived, but precious, summer season.
After coffee and homemade biscuits, the morning is spent in preparation for a colourful, light and delicious lunch, which we can enjoy in the garden overlooking the beautiful Black Mountains.
We will also prepare a delectable 3-course supper that would happily grace any table even if our summer lets us down, including recipes such as Aromatic Thai Poached Salmon, Mango and Avocado Salad with crispy Parma Ham and French Almond Tart with Macerated Strawberries.
At the end of the day, we can enjoy the fruits of our labours with a glass of wine to toast the day's achievements.
Game On
Whether wild or farmed, the availabilty of game has become readily available and increasingly fashionable, discover the secrets of preparing and cooking the many delicious forms, from locally farmed venison to birds a plenty including, pheasant, partridge, pigeon and wild duck and not forgetting rabbit and hare, we cover the brief roasting of the succulent young birds and best cuts, to casseroling the older and tougher ones, from traditional recipes to the contemporary, it's hands on all the way.
Temptingly Thai
Discover the delicate and aromatic flavours of Thailand. balancing the four elements: Salty, Hot, Sour and Sweet which forms such a large part of Thai cuisine, always colouful and fragrant with Chillies, Lemongrass, Ginger, Kaffir Lime Leaves, Coconut Milk and Cream. Stir fries, salads, soup, curries, rice and noodles the combinations are endless.
