Ingredients
  • 1 Pkt Puff Pastry
  • 12oz Gruyere Cheese - grated
  • 4 or 5 Beef Tomatoes - sliced
  • ½ Small Onion - finely chopped
  • 1 Clove of Garlic - finely chopped
  • 2 tsp Thyme Leaves
  • Salt & Pepper
  • Extra Virgin Olive Oil


Tomato Tart Instructions



Roll out the puff pastry quite thinly and line a large loose bottomed flan tin. Spread the cheese over the base, sprinkle the onion over the cheese plus ½ the garlic and one teaspoon of the thyme leaves, arrange the slices of tomato in reducing circles until all the cheese is covered, sprinkle over the remaining garlic and thyme leaves, season well with salt and pepper and a drizzle of olive oil, chill until required.

Preheat the oven to 200°c gas 6. Cook for 35 to 40 minutes until the pastry has browned and the tomatoes are tinged at the edges, cool for a few moments then remove the tart from the tin and serve.
